Orange and Pumpkin Panna Cotta

Ingredients
For the Panna Cotta:
- 3 sheets of gelatin
- 480 ml of 35% cream
- 60g sugar
- 1 vanilla pod or vanilla extract
- Orange and pumpkin jam es im-perfect®
For the Crumble:
- 120g of unsalted butter
- 30g of sugar
- 30 ml of honey
- 180 g of flour
Panna Cotta step by step
- We submerge the gelatin in a bowl of cold water.
- Place the cream and sugar in a saucepan. Scrape the vanilla seeds and add them to the saucepan (seeds and pod). Alternatively, you can add 4 drops of vanilla extract. Place the saucepan over low heat, stirring until the sugar dissolves.
- Using a strainer and a metal bowl, strain the vanilla pod and keep the liquid. Add the gelatin sheets (which you have gently squeezed to remove excess water). Blend with a hand blender until dissolved.
- Once dissolved, place this bowl over another bowl with ice and water to lower the temperature and gently whisk until the cream cools and thickens.
- We divided the mixture into 4 molds, covered them with plastic wrap, and stored them in the refrigerator. They will be completely chilled in 5 hours.
The Crumble step by step
* We can do this before taking the Panna Cotta out of the refrigerator.
- We cut the butter into cubes and let it rest for 10 minutes.
- In a metal bowl, add the sugar and honey and mix gently with your hands.
- Add the flour, mixing until you get a crumbly texture (without reaching the point where a dough forms).
- We spread the crumble on a baking tray.
- We bake it in the oven until golden brown and crispy (about 15 minutes). Alternatively, we can cook it in a pan, stirring with a spatula until it reaches the desired texture.
