This time we'll explain how to prepare delicious empanadas with spinach, goat cheese and onion jam, to give them a caramelized touch that will make them unique.

Ingredients
- 8 empanadas / wafers
- Onion jam es im-perfect®
- Goat cheese (we love the one from @formatgesmuntanyola by @ampansfundacio !)
- Spinach
- Walnuts
- Olive oil
- Salt and pepper
Step by step
- Using the side of the knife, we crush the nuts, crumbling them, and then we chop them a little to obtain small pieces like a pine nut.
- In a frying pan, add the walnuts over medium heat and toast them lightly, stirring constantly. Once toasted, remove them and set aside at room temperature.
- In the same pan, add spinach, olive oil, salt, and pepper, and cover for 3 minutes. Uncover and stir. Cook until the spinach wilts. Set aside.
- In a bowl, add the goat cheese, spinach, walnuts, and jam and mash it all together.
- In the middle of a pastry, we put a spoonful of the previous mixture, wet our finger with water and run it around the dough, then with a fork and close it in half, forming a half moon.
- We can also make them in gyoza style: take the dough in one hand, slightly cupped, and with the other add a spoonful of filling. Gently close it. Using your index finger and thumbs, fold and pinch the edge.
- Place the finished empanadas in a pan that has been heating over medium-high heat for a while. With the folded side facing up, add a little boiling water to the pan with a little oil and cover. Wait 5 minutes until the water evaporates. Uncover, add a little more oil, and cover again. Wait 2 minutes and remove from the heat.
- We serve the empanadas with the part that was in contact with the pan facing upwards.
