Chutney is a sauce originating from Indian cuisine. It's made with fruits or vegetables, vinegar, and spices. It's ideal for accompanying any dish, from rice and pasta to meats or toast. With the help of Semproniana's chef, Ada Parellada , we suggest making a chutney with red pepper jam from es im-perfect® ; a recipe with a sweet and sour flavor that's perfect for pairing with a lentil veggie burger.

LENTIL BURGER VIDEO WITH RED PEPPER CHUTNEY SAUCE

Ingredients for the vegetable burger (1 unit)

  • 125 grams of cooked lentils
  • Cooked polenta
  • 1 tablespoon of breadcrumbs
  • Salt
  • Pepper
  • Worcestershire sauce
  • Garlic and parsley oil
  • 1 egg

Ingredients for making Chutney sauce

  • Pepper jam es im-perfect®
  • 1 sautéed onion
  • Ginger

The hamburger, step by step:

  1. Mix the lentils with the polenta, being careful not to create a very smooth dough. Pay attention, as lentils are a delicate ingredient.
  2. Add a tablespoon of breadcrumbs.
  3. Beat an egg and add a tablespoon to the mixture. This will help all the ingredients bind together.
  4. Mix well, this time until you get a compact mass.
  5. Now you can season to taste with salt and pepper, add a few drops of Worcestershire sauce and garlic and parsley oil. Remove.
  6. Then store the burger until you have made the red pepper jam chutney sauce that es im-perfect®.
  7. Once the sauce is made, take the lentil burger mixture and shape it. You can do this by hand or with a round mold.
  8. Put a frying pan on the stove with a drizzle of oil. When it's hot, just cook the hamburger.

Chutney sauce, step by step:

  1. Add a tablespoon of caramelized onion to a bowl or saucepan. Add all of its juice as well, which will enhance the flavor of the sauce.
  2. Add two generous tablespoons of es im-perfect® red pepper jam and mix well.
  3. Add a few drops of soy sauce for a touch of salt. If you prefer, you can add Tabasco or mustard.
  4. You can grate a little ginger to give the sauce a spicy touch. We recommend using just a little. Now all that's left is to finish mixing.

To plate, we recommend placing the sauce next to the burger, without dipping it in the sauce. You can accompany it with some sautéed squash or other vegetables to add freshness to the dish. Sprinkle with sesame seeds, a pinch of oregano, and some leafy green sprouts.
